Our Wednesday night meal will feature a traditional Salvation Army ‘canteen cook off’ as we invite the very best of our disaster chefs to bring their canteens to the summit, rev their generators, ignite their stoves, and prepare the very finest dishes to ever come off a mobile feeding unit. Summit attendees will get to vote for their favorite entrées. Win and you’ll go home with honors, a canteen prize pack, and some serious bragging rights!
Participation in the ‘canteen cook off’ is limited to Salvation Army disaster teams and equipment. To be eligible to participate, participants must preregister their canteen using the form on this page, and be approved by their EDS director. All cook off participants must be registrants of The Salvation Army’s 2019 Disaster Training Summit. Plates, drinks and cutlery will be provided; all other items and related expenses (including food, travel, fuel and other incidental costs) must be brought, bought, stored, and cooked by the participating canteen.
Because attendees will be ‘sampling’ food from multiple canteens, all entrées must be no less than 4 oz and no more than 6 oz. Servings for approximately 400 attendees should be prepared. Entrée choices should reflect the culture of the canteen’s home corps. Some suggestions: gumbo with French bread; pulled pork sliders with BBQ beans; or a chorizo taco with corn chips. Voting will be based on concept, presentation and -- of course – taste! Please … NO DESSERTS! Desserts will be offered later in the evening in the summit exhibit hall.
One ‘Best in Show’ award will be given to the canteen that receives the most votes from summit attendees. First and second runner-up awards will also be given based on votes. In addition, our secret celebrity judge will be lurking in the crowd to select a prestigious ‘Chef’s Choice’ award winner.
